Slow Cooker White Bean, Spinach & Sausage Stew Recipe – Glen And Friends Cooking
Everyone loves a dump and go slow cooker recipe! This would be a great Crocktober recipe.
500 mL (2 cups) dried cannellini beans
1.25L (5 cups) chicken stock
Handful cherry tomatoes
1 onion, diced
1 carrot, diced
1 celery stalk, diced
Salt and pepper to taste
5 mL (1 tsp) summer savoury
5 mL (1 tsp) oregano
Pinch hot pepper flakes
4 garlic cloves, lightly crushed
2-3 fresh thyme sprigs
500g (1 Lb) fresh sausage cut in chunks
Couple handfuls baby spinach, roughly chopped
Place dried beans in a large bowl; cover with water 2” above the beans, and let stand overnight.
Drain the beans.
Add everything to the slow cooker, cover and cook on low until the beans are tender, about 7 hours.
Lightly mash the beans, breaking up the tomato and garlic.
Add the spinach, cooking just until the spinach begins to wilt.
Discard the thyme sprigs.
