Follow this Recipe for a delicious Roasted Butternut Squash with Spiced Lamb and a garlic yogurt sauce.

1 small to butternut squash
olive oil
Salt to taste
Black pepper to taste
1 yellow onion
4 cloves of garlic
1 teaspoon of fresh ground ginger
handful of parsley
1 pound of minced lamb
1 teaspoon of dried oregano
1/4 to 1/2 teaspoon of chili powder
1/4 teaspoon of cinnamon
1 1/2 to 2 teaspoons of garam masala
1/4 scup of pine nuts
3.5 OZ (100g) of Halloumi cheese
Pomegranate seeds

Yogurt Sauce
5.3 OZ (150g) full fat Greek yogurt
2 coves of garlic
1 tablespoon of fresh lemon juice
1 tablespoon of good quality extra virgin olive oil
Salt and Black pepper to taste
