Corn Chowder Recipe – Glen And Friends Cooking
This is a corn soup recipe / corn chowder recipe that is based on our memories of street corn soups that we have eaten all over Central America and the Caribbean.
250g (½ lb) bacon, chopped
2 onions, chopped
2 green peppers, chopped
1 jalapeño pepper, chopped
1 chipotle in adobo, chopped
Salt and pepper to taste
5 mL (1 tsp) ground cumin
1.5L (6 cups) corn
500 mL (2 cups) chicken stock or vegetable stock
250 mL (1 cup) 35% whipping cream
In a Dutch oven, cook bacon over medium heat until crisp.
Remove bacon and set aside, leaving fat in the pan.
Add onions, green peppers and jalapeño; cook and stir over medium-high heat until soft, and just getting golden colour.
Add chipotle, cumin, salt and pepper.
Stir in corn kernels and stock.
Bring to a simmer; loosely cover and cook, 20-25 minutes.
Stir in cream and adjust seasoning as needed.
